Jalwa Indian Bistro Unveils a New Menu

Raleigh, NC — November 4, 2025Jalwa Indian Bistro has introduced a brand new menu that celebrates the diversity of India’s regional cuisines through the creative lens of Executive Chef Mukesh Gautam. Known for his talent of balancing tradition with innovation, Chef Gautam brings together bold flavors, refined presentation, and a touch of nostalgia in each dish.

Rooted in the idea of reimagining familiar Indian comfort foods with a modern twist, the November menu moves effortlessly between classic flavors and unexpected combinations. Chef Gautam draws inspiration from across India, crafting a dining experience that feels both elevated and deeply personal.

Guests can start with inventive appetizers such as Dal Pakwan Nachos, featuring creamy chana dal over crisp oven-baked chips topped with desi guacamole and lemon sour cream, or the Tempura Dahi Gujiya with Blueberry Compote, which combines tangy yogurt, mint, and lentil honeycomb with a sweet-tart finish.

Other creative small plates include Avocado Panipuri with Sol Kadi, a refreshing twist on the beloved street snack, and Vada Cigar Roll, Chef Gautam’s playful take on Mumbai’s iconic vada pav served in an artisanal roll.

Main courses highlight the richness and depth of regional cooking, from Dum Ki Nalli, a slow-cooked lamb shank infused with aromatic spices, to Kunna Gosht, a velvety Punjabi-style goat curry prepared in a traditional brass lagan. Vegetarian dishes shine as well, such as Paneer Tikka Butter Masala, with chargrilled cottage cheese in a creamy tomato-cashew sauce, and Chargrilled Pineapple Kadhi, a tangy yogurt curry with a subtle tropical touch.

The meal rounds out with striking staples like Kali Roti, made with black sesame and activated charcoal, and Blueberry Cheese Naan, a soft, slightly sweet bread that adds whimsy to the traditional spread.

Desserts carry the same spirit of creativity, from Bengal Connection, a layered homage to Bengal’s sweets, to Black Gold, a sesame and charcoal ice cream paired with coconut and halwa.

“I’ve always been inspired by how deeply Indian food connects to memory and region,” says Chef Gautam. “This menu brings together the flavors I grew up with and the techniques I’ve learned over the years. Each dish tells a story, sometimes playful, sometimes nostalgic, but always true to the heart of Indian cooking.”
