Chef Teddy Diggs Announces Permanent Location for Coronato, New Roman-Style Pizzeria

Chef Teddy Diggs is excited to reveal the permanent location of Coronato, his new Roman-style pizzeria concept slated to open in spring 2019. Diggs' new restaurant will be a new build in the South Green shopping center and located at 501 S. Greensboro Street, Carrboro, NC 27517. He will continue to host pizza pop-ups for the public until the grand opening of Coronato. His Roman pizzeria is the first of its kind in the South.

The Menu
Coronato's menu will draw inspiration from the Eternal City’s bustling neighborhood pizzerie that churn out cracker thin crust pizzas, snacks and seasonal antipasti. In the glass, Coronato plans to offer cold craft beers, prosecco on tap and select Italian wines by the glass, alongside affordable bottles of wine and bubbles that pair perfectly for pizza-loving wine enthusiasts.

An Education in Roman Pizza
After extensively researching Roman pizza during his travels to Rome, Diggs has perfected Coronato's secret dough recipe. Rome and the surrounding areas of Lazio feature three types of pizza: Pizza al Bianca, Pizza al Taglio and Pizza Romana (commonly referred to as tonda or al mattarello.) Coronato will feature the latter.

Coronato's dough tends to be rolled very thin and it is made with olive oil, flour, water, yeast and salt. The addition of oil is the main distinction from a Neapolitan dough, the current pizza trend that is sweeping the nation. The oil gives the crust more weight, flavor and a crispy cracker like crunch. Neapolitan dough is more wet (70+% hydration rather than the Romana’s 40+% hydration), and the wetter the dough gives way to a softer and more flexible finished crust, while the Pizza Romana is perfectly blistered and crunchy.
